Here, traditional dishes like dal bhat are elevated with local tweaks, accompanied by naan, pickles, or curry鈥攐ffering a warm slice of home 7,000 miles away.

For Sherpas, food and community are inseparable. Restaurants in Colorado provide not just meals but immersion into a vibrant culture, complete with prayer flags and climbing memorabilia.
